Go for the medieval shell and the mosaic floors; ignore the fantasy reconstruction wrapped around them.
Why go
This was the Knights' headquarters and it still reads as a fortress from outside, with a moat, round towers and a gate built to be defended. Inside, the Italians rebuilt it as a stage set, which is either fascinating or offensive depending on your mood. The Hellenistic and Roman mosaics laid into the floors are the real reason to pay. An hour is enough; combine it with the Street of the Knights immediately outside.
